Turkey Bean Soup

As I mentioned a day or two ago I had some ground turkey that needed using up. I would say that I eat a lot of fish, but not so much the other stuff. Anyway, I decided to use up the turkey in the best way I know how, a soup! I am very into simple soups and like them to warm me up for lunch during the winter. This is how I am celebrating fall this week!

Turkey Bean Soup:
Servings: 4
Calories/serving: ~230

Ingredients:
6 oz of browned lean ground turkey
1 can of cannellini beans (about 2 cups, rinsed)
1 large can of diced tomatoes (about 2 cups)
2-3 cups water
Spices as you like (i.e. Chili powder)

Directions:
1A. If you have raw ground turkey… Brown it in a non stick pot over medium to high heat.
2. Add the rinsed beans, water and diced tomatoes. Sprinkle with your favorite spices. I use a touch of chili powder.
3. Once the mixture comes to a boil bring it down to medium low and simmer for about 20 minutes.
Done.

Seriously, soup is so easy to make!

I had a bowl today with 7 Kashi crackers (yep, I count them out). It is sooooo good, warm and comforting. I make this same soup countless ways… with black beans, diced tomatoes and chick peas, with zucchini, diced tomatoes and beans, you name it, I’ve done it.

I think soups are great because you can get a lot of volume for few calories + they are warm and comforting.
