Five Flavor Polenta
I wasn’t sure what I wanted to do with the polenta I made yesterday, but when I thought about what I had in my fridge it all just seemed to make sense!
Five Flavor Polenta
Ingredients:
1 serving polenta (last night’s made 4 small servings @ 130 cals each)
2 oz diced tomatoes (leftover from PB’s pizza last weekend)
5 button mushrooms (sliced and cooked in a nonstick pan)
50 g black beans (warmed up in micro for 1 minute)
1/4 avocado sliced (30 grams)
handful spinach
Directions:
Preheat the oven to 450 degrees. Put your serving of polenta on a baking sheet and bake until the polenta is a little brown and crispy (about 10 minutes). Meanwhile, prep all your other ingredients. When all ingredients are ready assemble as so:
From Bottom to top:
polenta
tomatoes
mushrooms
black beans
handful fresh spinach
avocado
And I had a small salad on the side:
Let me tell you… THIS. WAS. AMAZING. you all HAVE to make this! And it’s vegan right? OMG I was a little bit full with 2 bites left but I ate them anyway. It was just so delicious and healthy and yummy!
This afternoon I had a few little snacks in the office but don’t really feel like posting the pics.. for the record snacks were: a container of vanilla yogurt with 1/2 cup golean, a clif z bar (pb), and an apple.
Sounds DELICIOUS!!!!!! Can’t wait to sample!

YUM, YUM! The one time I had polenta, it was from a pre-made roll, and I wasn’t too thrilled with it. Do you make it yourself from scratch?

Okay, I just so happened to have something on-hand to make polenta with, according to google (coarse ground cornmeal?). So, I have the water heating, and I should be eating it later this afternoon (if I like it!). If I do, I’ll move to the recipe for the BSI (is there a forum or somewhere that announces this? I’m new. lol!)
