    Hi Jennifer-

    I buy lemons or lemon juice in the winter, even though they are obviously not local. It is a long journey to eating locally, and I am willing to make a few exceptions to make it more manageable for now.

    Favorite salad combos (all with the lemon juice, olive oil and salt, or with an annie’s dressing if I am out of lemons):
    -arugula with cucumbers, avocado
    -romaine lettuce with tomatoes, cucumbers, kalamata olives
    -garbage salad with iceberg lettuce, hearts of palm, artichoke hearts, boiled egg
    -baby spinach with sliced strawberries
    -baby spinach with grilled zucchini

    I basically like to take whatever lettuce I have and add whatever veggies or fruits I have on hand. In the winter it is really hard to have “fresh” salads so I usually just eat boston or romaine lettuce with the lemon, olive oil and salt as a nice plain salad. Other times I add maybe a few cubes of potato and some corn (although the season’s almost over).

  5. That’s weird that your nut allergy just began! My nephew is severly allergic to tree nuts, peanuts and sesame seeds! It’s hard for him. :( He has soy nut butter at his house, but it’s kinda nasto.

    My cousin, 24, was just eating almonds on day and she went into Anaphalactic Shock. This was not the first time she’d had nuts before, but all of a sudden an EXTREME allergy kicked in. It was pretty serious, she was in the hospital. I don’t mean to scare you, but I don’t think you can be a “little” allergic to something and you shouldn’t ignore warning signs.
