BSI: Baked tilapia with a PEAR mango salsa
Snack today was pumpkin yogurt (60 g pumpkin, 2.5 oz fage 0%) with 1/2 cup golean and 7 g mini chocolate chips.
After work I rushed over to the gym and burned 290 calories lifting. I had such a good upper body + abs workout!!!! But enough of this chitter chatter because I want to hurry up and tell you about my BSI dinner!!
Dinner was… amazing!!!!!!!!! A fun experiment that went realllly well.
PB drove up tonight since he has work in CT tomorrow and I decided it was a perfect time to make my BSI recipe! When Erica of Itzy’s Kitchen chose pears I got super excited as they are so yummy right now. I started dreaming up my recipe right away and tested it out tonight. PB kept raving about it (thanks PB) and I really enjoyed it too. It felt super decadent although it was really healthy.
Here’s it is:
Baked tilapia with a PEAR mango salsa
The tilapia:
Ingredients:
1 lb tilapia
4 oz white wine
1 whole lemon
salt and paprika to taste
a dash of parsley
Directions: Set the oven to 400 degrees. Place the washed tilapia in a pyrex and season the fish. Pour the wine over it and squeeze half a lemon over the whole thing. Slice the other half lemon into rounds and place over fish. Bake for 20 minutes.
PEAR mango salsa:
Ingredients:
1 sweet red pear
1 large mango
1/2 red onion
1/2 avocado
salt and pepper to taste
Ingredients: Peel and slice the red pear, avocado and mango into cubes. Dice the red onion. Toss together with a bit of salt and pepper.
To put it together:
When the fish is done plate it and spoon a bit of the PEAR mango salsa over it. Enjoy!
My plate:
I roasted 2 potatoes for PB and made a plain mixed green salad with balsamic dressing to go with it.
Let me tell you, the combination of fish with pear, mango, avocado and onion was incredible. I’m sorry I don’t really know how many calories and such are in this because the only thing I measured exactly was the fish (I had 6 oz). You all seriously have to try this dish, it was sooooo good!
After having this nice light meal I made us some tea, but saw a USPS box peeking out at me. What was it? My donation box of goodies from Katie over at goodthingscatered! I opened up the box and PB and I dug in, and er, I def had 1.5 cookies (kind of mad at myself but they were seriously worth it)!!! Thanks Katie, these are so amazing!!!!!
Oh, and before I forgot…. GO PHILLIES!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Watching the game with my PhillyBoy instead of cleaning!

this was a great dish, thanks for the recipe! (by the way, what white wine did you use? I used a chardonay and i think it may have been too strong of a flavor for this recipe . . . thoughts?)

rav1979- I used a really light pinot grigio.. i’ve never tried it with chardonnay, but in general I don’t really like it so I always use a light pinot grigio for cooking. I don’t really see the wine making much of a difference though, perhaps it didn’t have enough time to cook off?
