Erica's Buffalo Chicken Calzones
Erica’s Buffalo Chicken Calzones are amazingggggg! If PB hadn’t already proposed I bet he would have after eating this! When I read Erica’s post about calzones I knew I had to make these because PB loves all things spicy!!!!
PB’s plane was late and I was working late and didn’t have time to make a dough so I bought one from the market. It was a great idea because we got right to cooking when we got home. PB rolled out the doughs while I made the mixture of shredded boiled chicken breast, tomato sauce (I used diced tomatoes), mozzarella cheese, and hot sauce. When I put them together I put a little extra cheese on top bc PB likes things cheesy!!! We got them nice and crispy at 400 degrees for 20 minutes.
Here is her recipe:
Ingredients:
2 cooked chicken breasts shredded (I boiled mine)
1/2 cup pizza sauce (or tomato sauce- whatever you have is just great!)
3 teaspoons hot sauce
1/2 cup mozzarella cheese (I used part skim)
Pizza dough (either homemade or store bought!)
Small amount of olive oil
Directions:
Heat the oven up to 450. Mix chicken, pizza sauce, hot sauce, and moz cheese. Stretch out pizza dough, insert filling, wrap up calzone and pinch shut. Brush with just a bit of olive oil. Bake for 15 minutes.
Thank you so much for the recipe Erica! This was one of the most delicious and EASY dinners I think PB and I have ever made together!!!!!!!! You all must try this recipe!
By the way, we each had one calzone with a big bowl of arugula dressed with lemon juice and olive oil and a few pieces of avocado. Yes, that is a large plate that the calzone is on! They were hugggge!
Top picture is my plate, and PB’s plate is the one below with lots of hot sauce on the side!! He had a salad too though, of course!
We have 3 calzones leftover for the weekend which is really exciting! Expect to see these calzones more this weekend and a lot more in the future!!!
We ate them watching last night’s The Office, by the way. What a hilarious episode! Now we are relaxing and enjoying our Friday night!!!!! Happy weekend everyone!

I HEART calzones! Had my first one in Italy and it was fantastic. Haven’t had one since but this recipe looks sooo good.
Its funny. I don’t crave pizza hardly ever, but since I had that calzone I’ve had multiple cravings for calzones. Even though it IS just pizza. Strange how that works:)
