Spring Greens with Grapefruit Avocado Salsa
This is a salad that might as well be called candy, it is that good.
If that didn’t bring you in, maybe this will:
I don’t know where I got the idea in my head to have a salad with grapefruit and avocado, maybe because the day I was making my Easter menu all I had in my fridge was a red onion, 1 grapefruit, and avocado, and some spinach. Sometimes necessity brings out creativity, ay? Anyway, by the time Easter came around my fridge was full with fresh veggies and fruits, but the idea of this salad tempted me so much I had to try it! And it was a success!
Living a healthy lifestyle doesn’t have to mean eating boring foods. This salad proves that! I know I always say this, but you really need to make this salad!!!!
Spring Greens with Grapefruit Avocado Salsa
Ingredients:
4 cups baby spinach
2 cups arugula
1 red onion, diced
3 avocado, cubed
2 pink grapefruit, in segments
For the dressing:
2 tablespoons dijon mustard
2 teaspoons kosher salt
juice from 2 lemons
1/3 cup extra virgin olive oil
Directions:
1. Whisk the first three ingredients together, slowly streaming in the olive oil until it all comes together.
2. Mix the avocado, grapefruit, and red onion with half of the dressing. Toss the rest of the dressing with the spinach and arugula.
3. Top the spinach/arugula blend with the avocado/red onion/ grapefruit mixture.
4. Enjoy!

I changed the recipe a bit b/c i didn’t have any greens in the house. I added the juice of 1/2 a lime and 1 tb of cilantro. Yummy!

Oops – should add i was chopping for 1, so cut the onion, avocado and grapefruit by 2/3 as well.
