Pizza Friday (errr Sunday?)
I went to Philly for the last time until I am a married woman this past weekend! Isn’t that crazy? PB and I had a nice but super rushed weekend. I am excited that I will be moving very soon!
On Sunday my FMIL (that’s Future Mother In Law) and her husband came over for lunch. What could we have made besides PIZZA? It is PB’s specialty and I guess he was having withdrawals after 2 days without it. He prepped the dough while I got hooked on Big Love (watched all the episodes currently on HBO On Demand) and then we threw together the toppings.
We made 3 winning pizzas:
Pizza 1 (the winner, in my mind): Artichoke Pesto Pizza
Topped with pesto, fresh mozzarella, grated mozzarella, and a whole can of artichoke hearts
Pizza 2: PhillyBoy’s BBQ Chicken Pizza
brushed with BBQ sauce, topped with chicken breast cooked in BBQ sauce and mozzarella, and then drizzled with more sauce
Pizza 3: Fresh Tomato Pizza
topped with fresh mozzarella, grated mozzarella, heirloom red and yellow tomatoes, a dash of sauce, and my FMIL’s garden basil! YUM!!!
All of the pizzas were delicious but the company was even better. We are definitely reinstating Pizza Friday after the wedding. I really like the idea of the tradition of that. Also, I love the idea of getting together with the family once on the weekend. I love to cook and to host dinners and to be with my family (both rhodey and my new philly side) and I am excited to start doing that with PB as a team!
As usual, I am a big baby and am getting emotional over the idea of the change that the next month and a half will bring. I love my life and feel very blessed to live the life I do. I hate knowing that my heart will be torn between two cities and is torn right now. I want to spend as much time with my new family as I do my family. I don’t want to move and be far away from my dad, brother, sister in law, and the many cousins, aunts and uncles I see on an almost daily basis. I also don’t want to be far away from PB anymore and to miss out on his family events. All I can say is, I am excited and nervous for change, and I can’t wait to see what else this year will bring.
Anyway, all this to say: when you make your pizza, don’t be afraid of change! I always like to make the same variety of pizzas, but this weekend PB and I got a little creative. It is a little crazy to try something new on guests, but also an exciting and fun change! And they were all a success! Our usual pizzas will still make the rotation, but now we know we can experiment without a fear of failing.

My pizza MUST be topped with loads of roasted garlic, spicy marinara, greens, onions, mushrooms…
Mmm that tomato and fresh basil pizza looks delish! I know that all of this change can be scary and nerve-racking but just keep focusing on the positive new adventure you’re about to embark on! It is a huge life change but one that will continue to bless your life every day. 🙂

Being nervous about change is a good thing. When people aren’t nervous – that is when they usually question the change.
Hey girl, this post really struck me because I am in the same situation but I already live away from my family. It is so difficult. While I love being with my Hubby-to-be in this country and I adore being around his family and the friends I’ve met through him, a HUGE part of me misses life back in Canada and around my family. It is such a tough thing to marry someone and not be able to live in your hometown with both sides of the family!
My only suggestion is try not to think of it as a permanent thing. Maybe you and PB will be able to move back closer to your family someday? That will be something to look forward to!

I’ll never forget, my favorite pizza is this artichoke-chicken pizza from a restaurant in my hometown. the cooked artichoke is sooo good!

I think the first pizza sounds like a winner! I like the ‘new’ types of pizza (more gourmet, I guess?) – not stuff like pepperoni, etc.
Change is hard. It’s fact!! Esp. for me, so I completely understand. Don’t worry, your feelings are normal! (Omg, I sound like a self-help book on tape or something!)

OM goodness- those pizzas look amazing! What recipe does PB use for his dough? Do you grill or use the oven? I am full of questions because they look so delish!
