As you can probably tell by the recipes I have been posting recently, I have been not only pulling myself out of my food rut but trying to eat really well. So far I am! I feel great and have a lot of energy, and that is what is important. I joined in the Summer Shape Up plan (check it out if you don’t know anything about it) and while I am still using my own eating guidelines I have done all of the workouts Gina has posted. Egg & Spinach Mini Stackers!
This dinner kind of came together on its own, inspired by Caitlin’s crustless quiche of a few months ago. I knew I wanted something lower calorie as I wanted a treat (and it wasn’t treat night) and I felt like having a good amount of protein as I had just had a serious can-barely-lift-my-arms-now workout at the gym. After thinking about what I had in my fridge I put this together.
Egg & Spinach Mini Stackers
Ingredients:
1 whole egg, 2 egg whites lightly beaten
1 oz shredded mozzarella
1 cup frozen spinach
olive oil spray
Directions:
1. Preheat oven to 375 degrees. Spray a mini muffin tin with olive oil.
2. Fill a small pot with 1/2 inch water, add spinach, and cook on high until water evaporates (about 5 minutes)
3. Drain any remaining liquid from the spinach and add a small portion to each mini cup. For me this meant 9 of the cups. Pour a bit of the egg on top, and sprinkle the cheese on top of that.
4. Bake for 7 minutes, then broil for 3 until the cheese is browning and bubbly. Remove carefully from muffin tin (I used a spoon to go around the rim)
Enjoy!
So you can see how little they were… and how happy I am!!!!! This is a normal sized plate.

Fat: 9 g
Carbohydrates: 3 g
Fiber: 0.7 g
Protein: 19 g
Not bad right? Super low cal but my dinner usually is… I like to eat a lot during the day when I need the energy! 😉

Yum! I’m eating something very similar for a snack today (but in fritatta form rather than muffin form).
