    I like to add an apple into my butternut squash soup. It usually adds the perfect amount of sweetness in a very subtle way. Yum, I want to make this when I get home from traveling!

  2. This would be perfect for THanksgiving. We never have a soup, so it would be a bit untraditional, but I think everyone would love it.

  6. Sabrina – I’m a friend of your father-in-law and his family, and live in California. I love your blog and have 25 years of gourmet cooking under my belt. Can’t wait to see your show on FoodTV one of these days!

    Try cutting the squash into cubes, toss them with a little olive oil, s&p, and one or two heads of whole, peeled garlic (or more if you love roasted garlic). Roast together on a cookie sheet lined with foil, with a little drizzle of water, for about 35-45 minutes, stirring occasionally so they don’t stick. Saute 2 leeks (sliced) in a little oil, then puree all together with chicken broth in a food processor. Reheat, adjust the seasonings, and serve with a dollop of greek yogurt or sour cream. This roasted squash soup is a knock out every time I serve it. If you want it, I can email you the full recipe – but this gives you the basics.

Thanks so much for this fantastic and healthy recipe. I added cumin and a little hot sauce to the seasonings and was so pleased with the results. Love your blog!
