Healthy Turkey Burgers
What are you going to make for SuperBowl Sunday? Oh, you don’t know? Well, I’ve made that decision for you! Make these turkey burgers!
I absolutely love every version of these turkey burgers I have ever made. Adding mushrooms makes them so soft and tender, and the other additions keep the burgers flavorful and fun. These have lots of added vegetables, making them high in volume and lower in calories than your average burger. I made these for PB and I for dinner the other night, and from start to finish the whole process only took me 35 minutes. I love meals like that!
His & Hers Dinner
Can you guess which dish is for which person?
And a close up, just for fun:
Healthy Turkey Burgers
Serves 4 (makes 8 burgers)
Ingredients:
1 lb organic lean ground turkey
1 large white onion, diced
10 baby bella mushrooms, diced
1 can artichoke hearts, drained
4 oz crumbled feta cheese
1 egg
kosher salt & pepper to taste
olive oil spray
Directions:
1. Spray a skillet with olive oil and place over medium heat. Once hot add the onions and cook, mixing every couple of minutes, until softened, about 5 minutes. Add the mushrooms and kosher salt and pepper to taste and cook until softened. Meanwhile, dice your artichoke hearts.
2. Put the softened mushrooms and onions in a large bowl, and put the used skillet to the side. If you have time, let the mushrooms and onions cool a little before adding the other ingredients. Add the turkey, artichoke hearts, feta, and egg. Mix with your hands until combined, but do not overmix.
3. Heat the skillet up over medium high heat and spray with olive oil. Meanwhile, form the turkey mixture into 8 patties. Place 4 of the patties on the skillet and cover. Flip after 4 minutes and turn the heat down to medium low. Continue cooking until completely cooked through. Place aside and repeat with the remaining 4 patties. Enjoy!
And a few random thoughts:
-I am working on a really fun blog series, and I can’t wait to share!
-This weekend PB and I are going snowboarding. That is awesome for 2 reasons: 1. I LOVE snowboarding and 2. I love a good excuse to skip a long run! Mwahahaha!
-Have I mentioned I am going to JORDAN this summer with 14 friends and family? PB and I are so excited- I haven’t seen some of my aunts, uncles, and cousins in 4 years!!
Here are a couple of photos from the last big trip there in 2004 for my cousin Reem’s wedding (I went for 5 days in 2006 but can’t find any of the photos- it was a quick business related trip):

A few cousins, aunties, and an uncle!
Oh just the usual. A wedding guest brought his drum and played music at every opportunity:
My grandfather (Geddo). He was about 101 here, we think. Wasn’t he a handsome man?
Turkey burgers are my favourite – much better than beef burgers, and they don’t leave you feeling all bloated and full.
Have fun snowboarding this weekend.
I love Turkey burgers, I make them once a week. I’ll have to try adding artichoke to them!
Those sound and look amazing, and the side of sweet potato fries, YUM!
Looking forward to kicking a little cake decorating butt with you and Tina in NY.
I am crossing my fingers that my Minnesota Vikings will be in the Super Bowl. Just maybe??
So cool that you are going to Jordan! We are hoping to look in to a tropical vacation in the next few months. It always helps to have something to look forward to!

Have fun snowboarding this weekend!
He was a handsome man! and while I would LOVE turkey burgers at my superbowl party, I don’t think anyone else would eat them. I’m making chicken wings…in the crockpot. it cuts out tons of fat, and no flavor!
I have found that I have a love-hate relationship with turkey burgers, but I must say, I think your recipe has won me over! Delicious!
The photos from the wedding are lovely! What a beautiful bride!
Hehe, your plates look like mine and Adam’s plates sometimes ๐ The burgers sound delicious!
How fun about the upcoming trip. I love looking forward to vacation!!
Love turkey burgers – I just made some “Greek” style ones this week with sundried tomatoes, feta cheese, oregano, thyme, etc. TDF!
I have always, always, always wanted to go to Petra. I can’t imagine how unbelievable it is in person!

Let me guess. Your is the one on the right? ๐ Looks like mine.
I spent a month in Isreal in 99. We went over to Jordan for a few days and spent a day in Petra. It has to be one of the MOST AMAZING places in the world.
