Simply Recipes: Banana Bread
One of my favorite websites to consult when trying something new is Simply Recipes. Elise makes every recipe, well, simple, and you know that is my favorite kind. I was looking for a classic banana bread recipe when I came upon hers, and I knew I had to try it. I have made a whole wheat banana bread before, but this time I really wanted something that would remind me of my childhood.
I had two bunches of bananas sitting on my counter in case anyone wanted one after the Broad Street Run (race recap here). Many of our friends came over to shower before we headed out for lunch, and I thought it would be good to have an assortment of fruits available. Unfortunately, those lonely bananas stayed lonely and everyone left without eating any. I froze most of them in 1/2 banana portions for smoothies, but I saved 3 of the ripest ones to make banana bread.
They say baking is scientific. I love science, and I would do extra math problems for fun as a kid, but baking does not come easy to me. There is something about the exactness of measurements that I just can’t achieve, no matter how hard I try.
Luckily, this recipe is exactly what I need, as there is room for modification. I used 3 bananas, reduced the sugar to 3/4 cup, and reduced the butter by about a third. I also added a good handful of chopped walnuts. The end result is a delicious and moist banana bread with a bit of crunch from the walnuts.

I love, love, LOVE banana bread!!! Also, love that you’re putting your math brain for good use in the kitchen now…I hate trying to modify recipes or do measurements. I’m SO not a science girl!
Looks like it came out just perfect! Nice work ๐ Love banana bread. I’m a big fan of a less sweet version, so I think I would adjust the sugar as well.

Simply Recipes is also one of my favorite sites. There are more recipes there than I can count – I always find something delicious.
I think you get too nervous and psyche yourself out about baking b/c that looks so yummy. I hardly measure anything. ๐
@HangryPants, I do. You should see me in the kitchen when baking. I lay everything out just so, my hands shake, I am a mess!
Hopefully in time I will get better!
wow that bread looks delish! i am actually not a big fan of banana bread – imitation (or artificial) banana flavoring makes me gag, and sometimes extra ripe bananas do the same. but i can eat them in anything else! so strange. i do, however, LOVE zucchini bread. if you want a good recipe for that, my grandmoms is awesome!

Looks yummy! There is a really good one from Cooking Light that has yogurt in it. It’s on myrecipesdotcom. I think it tastes better than the full fat version.
see, i’m definitely NOT a science or math person, but i love that baking utilizes both of those! it’s almost like a break from my normal brain…if that makes any sense…? ๐

You should try Cooking Light magazine’s banana bread recipe, it’s pretty amazing.
That bread looks so moist…! I’m sure you really aren’t bad at baking…I used to make chocolate chips cookies melt and burn the bottom of the oven…now I’m better. I never figured out what I did wrong though! ๐
