Red Lentils for 1
Red lentils for 1 is a great pantry meal that can be ready in only about 30 minutes including prep time. When the fridge is looking a little empty at the end of the week, you can rely on this dish to get you through to your next market trip. Red lentils are different than the ones I have been cooking with all week because they melt right into whatever dish you are cooking, adding beautiful color and a smooth creamy texture. Next time you need a quick meal from pantry staples, make this dish!
Red Lentils for 1
¼ onion, diced
1 tbs olive oil
cumin, paprika, cinnamon, hot red pepper
¼ cup red lentils, rinsed
1.5-2 cups water
2 tablespoons hot sauce
In a medium saucepan heat the oil over medium heat. Add the onion and cook until translucent, about 10 minutes. Add a dash each of cumin, paprika, cinnamon and hot red pepper. Stir. Then add the lentils and water and cook covered for 20 minutes on medium heat, stirring now and again. Add the hot sauce and a bit more water if needed (I like it a bit soupy). After about 20 minutes the lentils should have all but melted away. Serve with a few slices of avocado and naan bread. Enjoy!
