I actually created it as a lunch with leftovers a few days ago and LOVED it.

I made the Spicy Grilled chicken and peach kabobs from the Whole Food’s website. I took a leftover skewer, unloaded it on top of mixed greens, 2 oz of feta. It was amazing! Didn’t need any spices or dressings! The juices from the peaches served as a dressing and the kick from the grilled peaches, onions, and chickens were good flavor!

Throw in yellow raisins towards the end of cooking and top with feta and walnuts. DELICIOUS! Its also a recipe totally stolen from 101 cookbooks – see here: http://www.101cookbooks.com/archives/tassajara-warm-red-cabbage-salad-recipe.html
