sweet giveaway! i would say my favorite combo with feta is olives, cucumber, and tomato…OR if you ‘roast’ the feta just a bit (you need a silpat to do it) it makes a really great warm topping for salads too

I love to try and recreate “Santorini Salad” that I ate everyday during 2 weeks on the island of Santorini (love Greece!)…fresh tomato, cucumbers, green pepper, red pepper, capers, olives, fresh oregano, and feta crumbled on top. As many ingredients as possible from the garden/farmers market! I love salads that don’t even have lettuce, but all of the “good stuff”. Great giveaway – thanks!

@NMT, Omg, when I was in Greece I ate the same salad every single day (sometimes 2x a day) as well! The only difference was they kept the feta in a single block and put it on top of the salad…it was legendary

I prepare a roasted beet and feta salad that even the kids love. I simply serve the roasted beets, feta and some chopped walnuts on a bed of greens…It’s delicious and fresh!

I love tossing feta with warm orzo or brown rice, then throwing in chopped fresh herbs and whatever veggies I have in the fridge…the feta gets melty from the heat and it is heavenly!

It’s not quite the salad, but it’s delicious use of Athenos Feta. Grilled chicken, olive oil, Italian seasoning, cherry tomatoes and basil tomato Athenos Feta cheese all mixed up and served in warm pita. it’s refreshing, quick and delightful.

spinach/mixed greens
sliced red onion
sliced strawberries
Athenos feta
topped with a fruity balsamic dressing (olive oil, raspberry balsamic, dijon)

One of my favorites is spring mix lettuce or spinach topped with sliced strawberries, mandarin oranges, blueberries, Athenos feta, candied walnuts and a light balsamic dressing.

i love the standard greek – cucumbers, tomatoes, red onion, kalamata olives, a big chunk of feta, and some olive oil. cannot get better than that!

I don’t do anything that revolutionary with feta in a salad. Just tomato, onion, cucumber, olives and a vinegrette. Topped with feta of course.

I love this feta challenge you are doing!! I made a great salad the other week with lentils, quinoa, FETA, black beans, tomatoes, cucumber, lemon juice, cilantro, pepper, and a splash of olive oil. and I put it on a bed of arugula. SO good!!

I love spinach and hot grilled chicken or tofu with a generous portion of feta as the topping–doesn’t require any dressing, maybe just a squeeze of lemon–delicious and nutritious!

My favorite salad creation involving Athenos Feta would probably start with a spinach and iceberg lettuce base for crunch and flavor. Then, I would add some fresh hulled strawberries, mandarin oranges, crunchy apple slices, sliced red grapes and some sweet red bell peppers. Topped with a scattering of Athenos Feta, it’s the perfect summer salad to cool off!

I make a southwestern salad–roasted corn shaved off the cob, black beans, pinto beans, chopped tomatoes, fresh chopped cilantro and a squeeze of lime juice all tossed with Athenos Feta…serve with tortilla chips and you have a meal!

All of these salads sound so good. I’m kinda boring compared to these but I eat Feta almost everyday on my lunch salads. My favorite lately has been grilled chicken, romaine, craisins, slivered almonds, Feta, tomatoes and cucumbers all drizzled in balsamic and olive oil. Fresh and yummy!

I have quite a few recipes with Feta, but I think my new favorite is a Cold Mediterranean Orzo Salad. It includes orzo, wilted baby spinach, chopped sun dried tomatoes (you could probably substitute fresh grape tomatoes), marinated artichokes, kalamata olives, red onion, a squeeze of lemon, the artichoke marinade is mixed in as the “dressing” and topped with Feta cheese…. it’s so good and even better the next day.

Feta goes extremely well with kidney beans. Just add lots of fresh veggies and a little red wine vinegar and olive oil. Delicious!

My favorite salad using Feta is one my mom makes. Big chunks of chopped tomato, cucumber peeled and sliced lengthwise in half and then into thin slices, thin slices of red onion, oregano, feta and a yummy red wine vinaigrette. No lettuce required

It’s cliche, but I love a good mediterranean style salad. Romaine, arugula, kalamata olives, feta, grape tomatoes, and pine nuts, dressed with oil, vinegar and oregano. Delish!

Hi, first off, I want to tell you I love your blog. My husband is 100% Lebanese so I can relate to all of your Middle Eastern recipes and posts! Fattoush is a recipe we tweek by using feta cheese all the time. We live in Las Vegas and adding feta to fattoush is a way to keep us cool with all this heat! Love it!
Just wondering do you speak any Arabic? I am trying to learn but only know the basics such as yella, habiti, habibi, imshi… and of course the bad words.

@Jacqui, Thank you so much! I am trying to learn Arabic too. My dad was always working late and my mom was from Italy, so I speak Italian fluently but very little Arabic!

What are your favorite Middle Eastern foods besides falafel? My favorites are manoushe(zaatar pizzas-you made these before on your blog), tabouli, and kaak and mamoul which my in laws only makes these for Easter. Yummy!

@Jacqui, Ummmm I love everything! Vegetarian stuffed grape leaves, za’atar with ANYTHING, hummus, mutable (it is roasted eggplant with labneh- better than baba ghanoush!), mincef, etc etc!!!!

It’s hard to beat a good Greek salad with big hunks of feta but a favorite that my mom makes is spinach, strawberries, glazed walnuts, old cape cod brand dressing sweet & sour poopyseed (though the salad is delish with just your own balsamic too!). Sometimes other adds in make their way in like chicken or red onions and of course FETA!
