I did it with a little olive oil, some balsamic vinegar and fresh mint (all to taste). I was a little nervous with how all of the flavors would blend, but it ended up working out well!

So funny! I came to your blog specifically to find new feta recipes, since I’m at a loss on what to make for dinner tonight
My favorite feta dish is a tossup between a classic Greek salad (chunks of fresh cucumber, red and green peppers, kalamata olives, tomatoes, feta and grilled chicken, no lettuce) and a salad with baby spinach, berries (I find blackberries and sliced strawberries work best), sliced mushrooms and a crumbled salmon burger.
Also, re: your question about dressing a feta and watermelon salad above? I love this with very little dressing, just a drizzle of very good (i.e. thick and expensive
) balsamic vinegar. This would also work well with a balsamic reduction.

…yes – I call this The Best Thing I Ever Ate… right now, it truly is… these flavors are so amazing together… and feta would add that salty creamy yum …
this salad contains –> quinoa + black beans + edamame + red onion + mango + marcona almonds + sea salt…
we’ve been eating this for a couple weeks at our house and neither Jason or I am tired of it yet !!
…if we do start to get bored with it, a feta infusion would definitely do the trick…

uh oh… I misread… I haven’t actually made that salad with feta… my brain instantly went to “what I will do when I win this” mode…

I make a “Crazy Caprese” (catchy, huh?)
with roma tomatoes, feta cheese, garlic cloves, olive oil… serve with a crusty bread.

I recently made a simple salad with butter lettuce, feta, peas, scallions. It is dressed with lemon juice and olive oil and is simply amazing!

My mom actually makes a really yummy pasta salad, and I decided to take it to the next level recently for a BBQ with some Athenos Feta! The pasta salad itself is pretty straight forward – some spiral pasta, your favorite Italian style dressing, some chopped red onion, black olives, and cherry tomatoes. Since I’m a huge cheese fan, I thought a crumbly cheese would go well, so after mixing it all together, I added some feta. WOW! I mean, the saying that feta makes it betta was definitely present in this dish! I’m actually hosting a BBQ tomorrow, and plan on making the pasta salad again!

Feta goes great with a simple kidney bean/cucumber/carrot salad. The feta has so much flavor, you just need some olive oil, salt and pepper!

My favorite way to use Athenos feta is to oil and season with salt and pepper tomatoes that are ripe and round with red onion.
I let that marinate together in the fridge up to an hour and then right before serving, add Athenos feta.

when i was growing up, i was seriously obsessed with feta. as in, i would eat a block of feta as an after school snack. my dad was pretty proud that my Mediterranean heritage had that much influence on my taste buds, but my mom was less than thrilled a block of feta never lasted moer than 24 hrs in our house.
i’ve grown up (a little) and now put feta in recipes. a few weeks ago i created the most amazing salad with feta! couscous, shrimp, big chunks of roasted corn, avocado, cherry tomatoes, a little salt and pepper, and obviously, feta. i mostly ate it cold, but once i warmed it up and added some butter and it was wonderful and risotto like!

I love this recipe for Baked Shrimp with Feta. Garlicy shrimp baked in a spicy tomato sauce topped with lots of melted feta cheese. It’s incredible!

I adore feta – probably eat it every other day! My top 2 dishes:
Orzo with shrimp, tomatoes, and feta. Cook the orzo al dente. In a big saucepan, cook a few sliced garlic cloves in olive oil, then add a can of diced tomatoes with some of the juice and let it cook a few minutes. Next add oregano, parsley, basil, salt, black pepper, crushed red pepper, and about 1/2 cup of dry white wine (I do it all to taste) – simmer for another 5 minutes. Add ~1/4-1/2 lb of shrimp, cook until done, then add the orzo. Once it’s heated through, add ~1/4 cup of Athenos feta. This is very satisfying with a side of something green like kale, and it’s really simple to make.
My other favorite is even simpler: bowtie pasta cooked al dente, then tossed with olive oil, sea salt, baby spinach, sliced kalamata olives, and a hearty dose of Athenos feta. Both meals are great for athletes like you and PB when you need carbs and protein, and they keep well so you can have plenty of leftovers.

19 yrs ago my brother became engaged to a woman from Greece. 18 yrs ago they got married. When this happened we were introduced to Greek Salads. That is the first time I had feta cheese and well it stuck with me and has lasted and love.

The most tastiest way I use whole athenos feta I crumble it with chunks of fresh avocado, chopped hot house tomatoes, fresh green peppers diced, chopped english cukes, spanish olives, chopped walnuts & finished with a touch of EVOO & Balsamic! The crunch of the fresh veggies & walnuts with creamy feta cheese creates the most unbelievable combination…Yum!!!

I do a Greek Chicken that is fast, easy, and everyone loves.
Four chicken breasts, pounded to 1/3 inch thick (or thereabouts)
baby spinach
sliced tomato
vinaigrette dressing of choice
Athenos feta cheese
toothpicks
box of flavored couscous
Fold the breasts in half and layer spinach, tomato, and feta in the middle. Secure with toothpicks. Cover in dressing, pop it into a 375 degree oven for 20 minutes. Serve over couscous.
