  2. Here’s another yummy alternative to bacon:
    I actually love to slow-roast some shitake mushrooms with a little salt and EVOO — they become crunchy, and the flavor concentrates so they taste just like bacon. I’ve used it in pasta dishes (add the crunchy mushrooms at the end) but it would be great on salads too (especially a spinach salad…mmm!).

  9. OMG, totally buying some! As a vegetarian, I still love the smell of bacon but think the alternative meat stuff is gross and scary! Those sound like the perfect edition to a salad! I bet they would make a great savory nut butter for a “B”LT!

  15. I never thought of these as a bacon substitute, but from a flavor profile perspective, it makes sense. I went to a raw vegan restaurant that made eggplant bacon using a food dehydrator once. It was pretty fantastic. I tried it at home and have been meaning to make it again.
