Martha Stewart’s Broccoli Cream Soup
Martha Stewart’s Broccoli Cream Soup is one of the tastiest, most filling soups I’ve had in a long time.
One day at the market while hangry I decided I that I should buy as much broccoli as I could carry. Random right? I didn’t feel like eating it steamed plain so I googled a broccoli soup recipe and found this Martha Stewart one. The recipe is really easy to follow and includes mostly ingredients you would have in your house.
I topped my bowl of soup with a few homemade croutons and a sprinkle of cheddar cheese. We made salads to go along with this simple dinner, but the soup was filling enough on its own- something I rarely say. My modifications included using half the flour the recipe called for and 3/4 the amount of butter. When it came time to blending I only partially blended the mixture, leaving gorgeous bright green pieces of broccoli that added heartiness and a welcome change in texture from the rest of the pot. I also didn’t strain the soup at all for the same reason.
As the rain passes through the East Coast this week, leaving us with colder than usual September weather, think about making this soup. With some homemade croutons and a big glass of sparkling water (or wine), dinner is complete.

I buy broccoli regiliously every week, this might be a good way to switch it up instead of the typical roasted or steamed versions I usually do.

We’re having colder than usual weather as well so soup sounds fantastic here too. I love that you loaded up on broccoli, I think were I faced with pregnancy cravings bacon and cheese would be more likely.
@Kelly, It was the most random purchase I have made in this pregnancy. I’m glad I did it though- it made me find such a great recipe!

this looks amazing! one of my favorite boxed soups is the V8 broccoli soup, but this one looks 10x as good. I’m putting this one on my list to try.
Looks absolutely delish. I love this soup, but you had me at the homemade croutons. Sadly, I won’t be making this anytime soon. It’ll be 105 degrees today!
@Pearmama, You can make croutons and put them on a salad! Perfect for the weather you are having.
Mmmm that bowl looks amazing!! Unfortunately, kaylin seems to have issues digesting after i eat cheese… So ive nixed it mostly. Croutons are an awesome soup topper

Did you use a handblender to blend the soup or a blender…I’m afraid my blender might overdo it.

How crazy was it that 756 was closed today! My sister works for the zoo and when I was sitting in traffic 1/2 mile from my house in the burbs for 1 hour listening to KYW I told her she better stay home. I love that it’s cooler…esp for you being in the home stretch…but this rain is killing us! My friends in Manayunk were under water!
