My favorite greek-ish salad combo. I often mix the ingredients up a bit, but here is what I made tonight: spinach, artichokes, feta cheese, cucumber, carrot, dried cherries.
After I took the picture, I topped it with olive oil and vinegar. If I’m not in a vinegary mood, I will top it with olive oil, fresh lemon juice, S&P.

I am not a Vegetarian (anymore) but I love putting morningstar veggie/blackbeen/chick’n burgers on lunchtime salads for a low cal & tasty protein!! Oh, and this salad was delicious!!

I am a huge salad fan. I eat one almost everyday. I had a food epiphany last year and stopped using things like pre-made salad dressing and started getting creative. I feel so healthy and now crave them if I miss a few days..So I already ate most of this one before I saw your post and had to share. Also, I joined a CSA and make salads out of what ever they give me each week, so I get a ton of variation.
Salad
1 whole heart of Romain lettuce
Small amount of Purple cabbage
1/4 bunch of Cilantro
1/2 shredded fresh beet and 1/2 onion slivered and marinated overnight in Lemon Juice with a bit of salt, parsley leaf and a smidgen of fresh rosemary
1/2 avocado chopped up
Chopped up raw pistachios
