A few months ago I worked on a secret project with Nasoya tofu. The end result was a bunch of videos for their Tofu U series, including a blooper one- obviously my favorite.
They were really fun to film, and since the shoot I have experimented a lot with tofu. I have been trying to create a coconut encrusted tofu for months, but I can’t seem to figure it out. I gave up.
Just last weekend, though, my friends Sarah & Simon made an incredible stir fry that had me saying it with every bite. I think they thought I was nuts. We showed up to the house really late and scarfed down tofu stir fry bowls while chatting way too energetically and throwing all of our bags everywhere. I am sure it was a sight to see. When we came home from the trip I couldn’t stop thinking about the stir fry and I had to make one myself! Here is what I created…
Tofu, Chicken, & Veggie Stir Fry
serves 4+
Ingredients:
1 onion, diced
1 red pepper, diced
1 package extra firm tofu, diced
1/2 cup sugar snap peas
4 cups broccoli
1 lb chicken breast, cut into bite size pieces
1 cup + 3 tbs teriyaki sauce
1 tbs olive oil
4 tbs dry roasted peanuts
Directions:
Marinate your chicken in a container with 1/2 cup teriyaki sauce for at least 20 minutes and up to a few hours. Do the same with the tofu in another container. Meanwhile, heat a large pan with the olive oil over medium heat. Add the onion and cook until translucent. Add the red pepper, sugar snap peas, and broccoli. Add the 3 tbs of sauce. Cook for 5 minutes until the broccoli become bright green. Remove the veggie mixture. Add the chicken and sauce to the pan. Cook over medium heat, flipping once, until cooked through. Add the tofu and cook for 5 minutes. Add all of the veggies and toss together to warm. Serve over brown rice and top with dry roasted peanuts. Enjoy!
Did you make it through all that?! Basically you cook everything in the sauce and toss it together! Looks a lot longer in the formal directions though.
Giveaway time: There are several ways to press tofu, one of them being with a fancy TofuXpress. I was lucky and received one from Nasoya, but they want to treat you too! The winner will receive a Tofu Express and a few other goodies.
Here’s how to enter:
1. Leave me a comment letting me know why you need the Tofu Express- but be creative!
2. Share this post with everyone you know, then come back and comment letting me know how you shared it. This includes Facebook (be sure to @RhodeyGirlTests) and Twitter (be sure to @rhodeygirltests). Don’t forget that the more ways you share, the better your chances.
Good luck! Contest ends Monday, January 10 at 12 PM EST and the winner will be selected by a group of my friends.

Honestly, cooking tofu scares me. I NEED this press…or else I may resort to only getting tofu out & that’s no fun, right?
Too funny. I think being on camera can always look easy but it is trickier than people think. Sorry to hear your coconut encrusted tofu hasn’t been a success. What’s been the hiccup. I’ve only made encrusted tofu once quite along time ago, though mine was with cashews and banana chips. It’s delicious quite sweet and savory at the same time.
I love tofu, but I have never pressed it, but that gaget look easy to use!
I’m the only vegan in my family and everyone is so astonished with how i live without eating meat or any of the stuff that has to do with it. of course i am not at all missing meat one bit. why you ask? because i have tofu! 🙂 i love tofu with all my heart. its delicious and a great alternative to meat, it provides all the protein i need without the guilt of ending a life. the TofuXpress is something ive been wanting for a long while. if i received one that would mean i could finally make delicious tofu dishes that would have a closer resemblance to meat to show the rest of my family why it is so easy to be a vegan. i will become a master tofu presser! haha
I would LOVE a tofu express because everytime i try to get all the water out of tofu i end up using too much pressue and crumbling the tofu. This would help so much!
I think I would make much more tofu if I had the express!
I need the Tofu Xpress so I can make funny videos with tofu like you did.
i would love to try a tofuXpress because since i am a lazy….i mean busy… college student and when i make tofu i just use paper towels for at most 5 min to press it. i never feel like making one of my dish towels dirty cause that just means more wash to do haha
I saw your video when I attedend Nasoya Tofu U even in L.A. You look natural on camera 🙂 and I’ve met you in person and you seem nice.
I would love to win the TofuXpress so I can try all the tofu recipes on Nasoya’s website without using up all my “Costco size paper towel pack”.
I neeeeeed one of these! I had no idea this product existed, but it’s a great idea – especially for people like me who try to keep a green kitchen. I avoid paper towels for the most part, but I cook focus dishes at least three times a.week and it’s always a test of my patience – and towel supply. I use clean flour sack towels to absorb extra moisture.
I also highly recommend freezing the pressed tori prior to cooking – it gives you a more restaurant style texture!
I want to get more adventurous in my tofu cooking! Tofu intimidates me, but maybe this will help me get out of tofu rut and try other variations!
I adore tofu in anything. Being a mom, tofu makes life SO much easier in so many ways!
For example:
* On busy mornings we toss silken tofu and fruit into the blender for an instant and super healthy breakfast. My kids love these, and you can make a wonderful frozen treat by freezing the smoothies, too!
* I make a dish very similar to the one above, except that we use a frozen asparagus stir-fry mix, firm tofu, and Very Very Teriyaki. Super fast and healthy!
My kids love tofu and have never thought of it as “Yucky”, as some of my friends call it.
I’m new here and can’t wait to try some of these great recipes and tips. But being a super-busy mom who is also a college student, I could really use a TofuXpress to make my life a little easier!
