BSI Entry: Umjaddarah (or Mujadarah)
Umjaddarah and Mujadarah are the same thing… the difference in pronunciation is simply what country you come from. It is a traditional Middle Eastern dish, a Middle Eastern DELIGHT if you will. When Shannon announced that this week’s BSI would be lentils, I just knew I had to make something from the middle east, and this was the perfect, easy dish.
This is the RG version of the recipe, but you will pretty much see this exact recipe wherever you look. I called my auntie last night for tips on how to make it as she is the best! I practiced this recipe now so that I can make it for PhillyBoy in the future.. this is so up his alley!!!! And by the way, it may not look pretty, but it tastes… amazinggggg!
Umjaddarah (6 huge servings @ 455 calories each- next time i’ll portion them out for more servings):
2 cups rinsed green lentils*
2 cups white rice*
2 large onions
s + p
1 tsp cumin
8 cups water
Chop up the onions and saute over medium high heat with the oil until the onions get reallly dark (like almost burned). Be patient with this step! It is the most important part! Add the lentils, rice, water, cumin and salt and pepper to taste and cover the pot. Let cook until all the water is absorbed, about 35 minutes. Serve with cucumber and tomato salad or yogurt.
*You can sub in any type of lentil or rice and it is still delicious. Next time I will try it with brown rice and diced tomatoes to add more volume.. yum yum! It gets better with time so it is even more delicious the next day.
I had a serving of it for lunch today with a fresh romaine salad with salt, lemon juice (half a lemon) and 1/2 teaspoon of olive oil. This dish was sooooo satisfying! Oh! and eating only 1/2 banana in this morning’s breakfast made me hungrier earlier.. I had 150 g baby carrots and a pb z-bar at 10:30!
