Pomegranate Vanillocktail
Last night PB and I each had a little pomegranate drink. It was so simple to make, and so refreshing.
Here’s how to make it:
Combine 1 cup of pomegranate seltzer (or plain seltzer) with a tablespoon of pomegranate seeds and a splash of vanilla extract (about 1/8 teaspoon per glass). Enjoy!
And I bet a lot of you would love to know how to prepare a pomegranate without staining lots of things. It is actually really easy with this method.
Prepping a pomegranate:
-Fill a large bowl with water
-Place the pomegranate in the water, and do all of the next steps with the pieces under water.
-Cut the pom in half
-With your hands, start separating the pieces of pomegranate from the pith.
-The pith will rise to the top while the seeds will all sink.
-When you’re done, skim off the pith with ur hands and drain the rest of the water + pom seeds.
So simple right?
Here is what it looks like in the bowl when you’re done peeling but the pith is still in the water:

I’ve never had a pomegranate ( at least not that I’m aware of) Will the water dilute the flavor of the pom?
Allison- I’m not really sure what you mean? The drink doesn’t taste too much like pomegranate, but the flavor is definitely there. I like to snack on pomegranate seeds plain and they taste awesome! You should try them.

I have seen all type of pomegranate recipe popping up in blogs everywhere – I have always loved the fruit but rarely get the chance (or bravery) to test it out in different recipes. This is so inspiring.
Mmmm yummy! I love pomegranate seeds. They are delicious in champagne. And in champagne and orange juice.
OMGoodness – that drink sounds fabulous! I’ve never thought to throw the pom seeds in a beverage before! I need to try that out!
