BSI Pumpkin: Pumpkin Gnocchi in a Cinnamon Cream Sauce
Hopefully I’m not too late! The weekend escaped me and I didn’t have time to blog my pumpkin recipe until now! I was psyched when Miss Lindsay chose PUMPKIN for this week’s BSI as I had planned to have an iron chef style Battle Pumpkin with my cousins on Saturday night. In the end we decided to not do it since everyone seemed busy and it was just PB, DrumMajor, and I.
PB made some fun pizza appetizers and DrumMajor made pumpkin chocolate chip mookies (muffin cookies). I made pumpkin gnocchi in a cinnamon cream sauce!
Ingredients:
3 potatoes, boiled, peeled, and smashed
1/2 cup pumpkin puree
1 egg
sprinkle of cinnamon
1 cup of flour
a bit of flour
1 small container of light cream
1 tbs butter
1 tbs flour
Directions: Mix the potato, pumpkin, egg, and cinnamon. Add the flour and mix only to incorporate. On a well floured surface roll out the dough into a rope and slice into small bits. Indent each piece with a fork. Boil a big pot of water and in small batches cook the gnocchi. It is done when the pasta comes to the top of the water. Meanwhile, melt the butter in a pan and add the flour. Whisk well. Slowly add cream while whisking until all the cream is in the pan. When all the gnocchi is cooked add it to the sauce and shake a sprinkle of cinnamon. Sprinkle parmigiano on top if you like! Enjoy right away!
This was DELICIOUS! It was such a unique flavor and very hearty and comforting. And it seemed like such a complicated recipe but was actually really easy and came together in less than an hour.
Here are some pictures from the night… DrumMajor was cracking up and saying “hey will you take a picture for my blog” (she doesn’t have one). She thought it was hilarious since I kept asking her to take pictures since my hands were covered in pasta dough. Thanks DrumMajor. Oh, and PB dropped an entire tray of roasted peppers and artichokes. poor thing. Then he made another batch and put way too much salt. He got it just right the third time!

And then, after that lovely pumpkiny dinner, we played a few rounds of Wii bowling. PB used to always win. I smoked him and DM this time!

Have I told you recently that I heart you? I just went out for a fabulous meal at an Italian place and got a paella spaghetti dish and my stomach is super happy full… but I think I could totally go for your pumpkin gnocchi right now anyways.
