HangryPants' Eggplant Chips
Thank you all for your great advice re: wedding and HRM issue!
Heather of hangrypants oh-so-casually mentioned her recipe for eggplant chips in a post the other day, and I knew I had to make them! And I even had all the ingredients at home!
Her instructions are simple… slice an eggplant very thinly, layer it between paper towel and roll with a rolling pin to get out the bitterness, and then bake at 400 degrees for 20 minutes with a simple topping of pepper and olive oil (flipping halfway through). I almost listened in that I didn’t use any oil, and I used a bit of salt and a heavy weight to remove the bitterness instead of the rolling pin. Can’t mess with what my mom taught me ha.
Verdict? These eggplant chips ROCK. I ate an entire eggplant’s worth in two days. No joke. They sometimes tasted crunchy like chips, and other times tasted like soft marshmallows. You have to make them to know what I mean! And, well, you just have to make them!
My new way of eating is going well. I decided that I will build in one treat a week, just like before. I find that knowing I have that treat to look forward to helps me eat well all week. I am eating a South beach diet way to feel better and cleaner and healthy, not to lose weight (although it has been an added benefit) so if I want a treat a week I will have it!!!! Want to know how I am eating, and enjoying eating very much? Well, today for example this is the menu:
Breakfast: 2 eggs with some chopped spinach (about 1/4 cup) and 1/2 oz mozzarella cheese
Lunch: 1 or 2 (depending on hunger) 2 oz turkey/feta/spinach burgers and an arugula salad with 1/4 avocado and lemon olive oil dressing
Snack: sliced pepper, sliced cucumber, 6 black olives
Dinner: 1 baked yellow squash with 1 teaspoon parmigiano baked on top, 4 oz of steamed fish
Late night snack: Chemical-full sugar free Jello dark chocolate
*I also have a mozzarella stick in my lunchbag today just in case I am insanely hungry before my run tonight, but I’ve never had them before and I am kind of afraid of eating it hahaha.
The only things I miss are bananas, oatmeal, and berries, but I will start having the oatmeal and berries at the end of this week- 1 serving of each a day. So then I will be eating many of my favorite foods. I am not even craving sweets. Crazy for me.
Speaking of treats, it is going to be a huge treat to see PhillyBoy this weekend. I am flying down on Thursday! His tax appointment is Friday morning and I am using his accountant & also learning about his tax stuff so I “have” to miss Friday’s work. After the appointment I will study though, I swear! Anyway, it will be nice to spend a weeknight with him. Any special Valentine’s plans for you? I have a big surprise up my sleeve and I can’t wait for the big reveal on Saturday!!!!
Goal for today: Drink lots of water!!!!!

Betsy in Pgh: They curled up because I used tongs to flip them and they were still a little soft, but before I flipped them I noticed they had already turned up a little at the edges, so it is kind of hard to tell! But the curly parts WERE crunchier?

Sarah- Wow, I just added that up and it was only 1200 calories, no wonder I am losing weight! I am still hungry right now though so I will probably end up eating the 2nd turkey burger which will bring up my calls to 1500, which is about right for me in slow weight loss mode (I naturally vary between 1300 and 1800 cals a day). Hope that helps!

Try baking the eggplant chips with some garlic and dill weed – It will blow your mind and it smells so good in the oven!

Yum- I think I have accidentally made eggplant chips by slicing it too thin, but this looks amazing. We still don’t have plans for Valentine’s day…and I better get planning!
Your new menu sounds quite good. I wish I had the discipline to follow a plan, but I tend to stick to what’s comfortable.
