  2. Wow, never heard of eggplant chips but those are so cool. Do they shrink and curl up like that in the oven?

I’m laughing at your “chemical-full” description of the Jello snack. Your veggie-licious day has gotta make up for a few chemicals, right?

Can’t wait to see what the surprise is?

    Yummy eggplant chips!

  7. I am glad you enjoyed the chips. I have another eggplant that I would like to get.

  8. That did not make sense – I have another one I would like to use. 😀

  9. Love the eggplant chips! I need to make them! They look easy enough for me 🙂

Betsy in Pgh: They curled up because I used tongs to flip them and they were still a little soft, but before I flipped them I noticed they had already turned up a little at the edges, so it is kind of hard to tell! But the curly parts WERE crunchier?

  11. Oh my gosh those eggplant chips look devine!

You looked so cute in your KERF tee today! 🙂 I love mine.

Yum, those eggplant chips look great! I, too am starting to eat South Beach for a little and was wondering if you had an estimate about how many calories your sample day menu is? Thanks!

  13. Fabulous chips 🙂

I saw your picture on KERF – very cute!!

Thanks everyone! I love new long sleeve comfy tees!

Sarah- Wow, I just added that up and it was only 1200 calories, no wonder I am losing weight! I am still hungry right now though so I will probably end up eating the 2nd turkey burger which will bring up my calls to 1500, which is about right for me in slow weight loss mode (I naturally vary between 1300 and 1800 cals a day). Hope that helps!

Try baking the eggplant chips with some garlic and dill weed – It will blow your mind and it smells so good in the oven!

  17. i am definitely going to give these a try! Homemade veggie chips! NOM!

  18. That “chemical-full” note made me giggle. That’s so nice you’ll be together on Valentines Day!

  19. Yum- I think I have accidentally made eggplant chips by slicing it too thin, but this looks amazing. We still don’t have plans for Valentine’s day…and I better get planning!

Your new menu sounds quite good. I wish I had the discipline to follow a plan, but I tend to stick to what’s comfortable.

    Enjoy your day!
