Rotini con zucchine e feta
What a quick meal! When I made dinner for my dad, aunt and uncle 2 weeks ago I made a simple steamed asparagus, the salmon from this post, and then I got stuck. I knew I needed some type of a carb (both my dad and my uncle can’t have a meal without one) but I didn’t have much on hand. I decided to throw together one of my single girl meals as the carb side.
When I lived with my cousin in my condo I often wanted a quick meal that both satisfied and didn’t take a lot of time to put together. It wasn’t as fun to always cook for one so I tried to throw some quick ones in there. This is one of those recipes, and it doesn’t disappoint.
Rotini con zucchine e feta
Serves 1 (I multiplied this by 4 the night I made the big dinner)
Ingredients:
2 oz rotini (measure when dry)
1 medium zucchini, cut into small pieces
1 oz feta
dash of salt
dash of red pepper
spray of olive oil (1/4-1/2 tablespoon oil)
Directions:
1. Add salt to a boiling pot of water for pasta and cook the rotini according to the directions (usually 7 minutes for al dente rotini)
2. Meanwhile, heat a skillet to medium heat. Spray with the olive oil and add the zucchini and red pepper. Cook on medium for 5-7 minutes until the zucchini have softened a bit.
3. When the pasta is done drain in and toss it in the skillet with the zucchini. Mix together, add the feta, and serve!
