Buffalo Chicken Pizza
Buffalo chicken pizza is my answer to a long day of work and little time in the kitchen. The chicken adds satiety, and the hot sauce makes each bite interesting, almost like visiting your own personal inferno. To make the pizza both naughty & nice, I made one half buffalo chicken and the other half plain. We needed the break from the extreme spiciness!
When I first met PB we thought we were these great chefs as we “made” pizza every Friday. That entailed taking a Boboli crust, adding ready made ingredients, and baking it for a few minutes. With a side salad we thought we were masters in the kitchen. Over time PB and I started making our own dough, and we left the life of Boboli. Recently, Boboli let me know they had whole wheat crusts (I had no idea) and they sent me a few to try. This was a great time saver for the middle of the week, and the ingredients list isn’t so bad. Best of all, I liked not having to clean the counter of flour. Here’s the thing… don’t compare Boboli to real homemade pizza dough. It will never win. If you value it for simply what it is, a ready made pizza crust, you will be as pleased with the results as I am! I am going to start buying Boboli whole wheat crusts when we are in a time crunch, and at 2 for $6 at my local grocery store, they are inexpensive too.

Buffalo Chicken Pizza
Serves 2-3
Ingredients:
1 Boboli whole wheat crust
app. 1 cup crushed tomatoes
1 cup shredded mozzarella
1 piece of grilled chicken, diced
3+ tbs HOT! sauce
fresh basil, if you want to make it naughty & nice
Directions:
Preheat oven to 450 degrees F. Spread 3/4 cup sauce over the crust. Sprinkle on the mozzarella cheese. Put the remaining sauce, chicken, and hot sauce in a bowl. Toss to coat. If you are making the pizza naughty and nice, put the chicken mixture on only one half. If you are making the pizza entirely buffalo chicken. Spread it over the whole pizza. Put the pizza in the oven for 8 minutes. Remove and slice into pizzas. Put back in the oven to crisp up the crust. Remove, and if your pizza is naughty and nice, sprinkle the fresh basil over the nice half. Enjoy!
Healthy Living Tip: Instead of using buffalo sauce, which is laden with butter, I use a mixture of hot sauce and crushed tomatoes. It tastes great without making your (my) pants tight.

I love making pizza! Boboli just sent me coupons for their whole wheat crust, too. Your Buffalo Chicken Pizza looks amazing. Before I went vegetarian, I used to get the BBQ chicken pizza from Chicago Uno Grill. Maybe I’ll try a veggie version!

I’ve never used a Boboli crust! It really is a good idea though. Making your own really is a time commitment!
I’ve been reading your blog for a long time (I love it!) and never commented but I go to PC so I felt compelled to comment to this…this might not be golden crust buff chick but it looks so good! I’m a vegetarian now and I’m pretty sure this is the only thing I miss.
