Lazy Man’s Grilled Chicken Salad
Packing a lunch for PB can sometimes be a bit stressful. We are both rushing around to get ready for work, but he has to leave at a very specific time to catch a shuttle and lunch needs to be packed and ready when he walks out the door. Over time I learned to pack his lunch at night like I used to do for myself in RI, but after cooking and cleaning up dinner I can get really lazy.
Enter: prepared grilled chicken!
This week I bought a couple of grilled chicken breasts from Whole Foods that I can throw together to make a quick and tasty salad. With an apple and a Laughing Cow cheese as a snack, lunch is ready to go.
Lazy Man’s Grilled Chicken Salad
Serves 1 lovely husband
Ingredients:
1 grilled chicken breast
3 cups assorted lettuces
1/2 cup grape tomatoes
10 kalamata olives
1/2 large sliced cucumber
1 oz feta
salad dressing
Directions:
I simply throw everything in a tupperware container in different sections, keeping the salad dressing apart in a mini Ziploc bag or mini container. When ready to eat toss together with the dressing and enjoy!
The salad stays good until the next day since there is no dressing on it, and it only takes me 5 minutes to throw together… just my idea of a packed lunch! I hope PB enjoys it today!

I should really start making my lunches the night before, lately I am rushing around like a maniac. Good idea to make the grilled chicken ahead of time!
Hooray for your appointment tomorrow! Can’t wait to hear! I make the majority of Josh’s lunch the night before and then just assemble/ice pack up in the morning. It does make life super easy! I should totally consider buying some pre-cooked chicken for him

What a nice wife! I make the dinner that turns into the leftovers Chris takes for lunch, but, then he’s on his own. Unless he asks very nicely. ๐ Looks delicious.

That’s what I had for dinner last night, only with a lamb burger instead of chicken ๐ I love to make dinners that make great lunches the next day. Saves time and is more interesting than a PB&J everyday!
How exciting to hear what the baby’s sex is! If you haven’t seen it yet, I HIGHLY recommend seeing the documentary “The Business of Being Born.” I saw it recently and thought it was so well done and thought provoking. I think it is a must for any new mom ๐
When I was pregnant, I knew that I was having a boy even before I had a sonogram or anything. Are you leaning towards one side? Either way its super exciting!
Its great to also precook a few pds of grilled chicken and throw it in the freezer, cheaper then buying precooked and not extra work if your already making grilled chix for dinner.
@jen, That is a great point and ideally exactly what I would do. Any thoughts on a good way to bake simple chicken breast so I don’t have to bust out the Griddler and spend an hour cooking 1 lb of chicken? Would love some tips since my simple baked chicken breast always comes out dry!
Have you tried baking the breasts in broth to keep them moist, I find chicken needs a liquid to keep it from drying out.

Tomorrow! I’m so excited for you! I’m still four days away from finding out what we’re having. And my appointment is at 6:30pm. Work on Friday is going to be torture! I’m just really praying that our baby shows their true colors ๐ because we’re having a party on Saturday with our family and closest friends to do a gender reveal!
It’s such an exciting time ๐
