Pulled Pork & Cabbage Slaw Sandwiches
I didn’t grow up eating like the typical American child. I didn’t try peanut butter until high school, maybe even college. I still don’t know what a sloppy joe is. And I definitely had never eaten pulled pork.
My friend Emily mentioned this pulled pork recipe, and while I was hesitant, it strangely sounded delicious to me. I knew Trig would love it, so I bought the ingredients and got to work on my own version. Meghann, at BlogHer, was eating some sort of chicken and cabbage sandwich, and while it is also something I wouldn’t normally eat, it also sounded delicious. I combined the two concepts into this sandwich.
This was my first time cooking pork or dealing with cabbage, and I think it came out great. The pork melts in your mouth, and the crunchy and sweet cabbage is a great contrasting combination with it. A 2 lb cut of pork shoulder gave us over 6 servings.
Pulled Pork & Cabbage Slaw Sandwiches
Serves 6
For the pulled pork:

Ingredients:
2 lb pork shoulder
8 oz gingerale
salt
4 oz BBQ sauce (I used bottled this time)
1 medium onion
Directions:
As I didn’t have a crock pot I used a regular stainless steel pot. Slice the onion and place half in the bottom of the pot. Top with the pork shoulder and the remaining onion. Pour over the gingerale and add just a touch of kosher salt. Cover and cook on medium low. After 2 hours take the lid off and add the BBQ sauce. Cover and continue cooking until the pork begins to fall apart. For me this was a total of 4 hours. Take the pork off the heat and shred with two forks, adding a bit more BBQ sauce if necessary.
For the cabbage slaw:
Ingredients:
1 head of purple cabbage
1 tsp sugar
1 T cider vinegar
2 T olive oil
Directions: Shred the cabbage. Whisk together the sugar, vinegar and oil and pour over the cabbage. Toss and refrigerate until ready to eat.
Assembly:
Toast a bun. Top with some pulled pork and cabbage slaw and enjoy.

girl, you and i probably had 180 degree opposite diets growing up! you have got to try sloppy joes next…they’re amazing! i like to add lentils to mine – mmmmm 🙂
@Heather (Heather’s Dish), I had Nutella sandwiches on pita for lunch as a kid. No one really ate either at the time and I felt a lot like the girl eating the “moose caca” in My Big Fat Greek Wedding.

sloppy joes from scratch are definitely worth a try–skip the canned stuff though 🙂
love pulled pork–have a few diff versions on my blog but never one with ginger ale. I’ll have to try it!

see if you can find King’s Hawaiian rolls, and eat your pulled pork on that the next time! takes it to a whole new level! (says the nice jewish girl who loves pulled pork, and was eating matzah next to you while you ate pita!)
I agree with you! Growing up I didn’t get to eat much “american” food and pulled pork is now one of my favorites. I also have a great recipe for a broccoli slaw that is fantastic – broccoli slaw, apples, candied pecans, cranberries. Let me know if you’re interested in it and I’ll send it your way. It’s another variation that is yummy with pulled pork.
