Smitten Kitchen's Smashed Chickpea Salad
Wow. Deb over at Smitten Kitchen knows what she is doing. Holy Moly. I wanted to make a different type of dip for lunch with our favorite bishop on Saturday. Hummus, baba ghanoush, lebneh- mine would never compare to what these men have eaten all over the world and Middle East in the past. So when I saw Deb’s Smashed Chickpea Salad, I knew it would be the perfect creative dip for the lunch!
I served this with some toasted lavash bread, sliced red pepper, and baby carrots. Also, deviating from the recipe, I smashed the chickpeas all the way to make it more dippy. It was a success, and you all need to try it!

The ingredients are:
-1 can of garbanzo beans, rinsed and drained well.
-chopped red onion
-chopped kalamata olives
-lemon zest and juice
-a bit of parsley
-sea salt and pepper
It was reallly delicious, and all of the guys (my dad, PB, and the bishop) loved it!
