Roasted Asparagus
Roasted Asparagus is a simple dish that you will find on my dinner table at least once a week in the spring. Few ingredients are needed to make this delicious side dish shine. A hint of fresh lemon zest keep the flavors bright and add a pop of color to your dinner table. Make this dish today and I promise you will not be disappointed.
Roasted Asparagus
Serves 4
Ingredients:
2 bunches asparagus
1 tbs extra virgin olive oil
kosher salt to taste
zest of 1 lemon
Directions:
Preheat your oven to 425 degrees F. Wash your asparagus and chop off the bottom 3rd part. (Alternately, you can snap each spear where it naturally wants to break, but I prefer using a knife so all the spears are uniform). Drizzle half the olive oil on a baking sheet and add the asparagus. Sprinkle with kosher salt and drizzle with the remaining oil. Toss to combine and spread out evenly on baking sheet. Bake for 20 minutes until the asparagus are slightly limp. Transfer to serving tray and sprinkle with the zest of one lemon. Enjoy!

PB and I are running the 10 mile Cherry Blossom run in Washington DC this weekend! We are heading down with our friends Kristine & Jon and we’re so excited. I will hopefully be running with Ashley and her friends and meeting up with Anne P! The last race we ran was the Disney Half Marathon, where we spent our time laughing and grimacing at the freezing rain. The previous race was the Philadelphia Half Marathon, which was so much fun, with an even more fun after party attended by the infamous Heather & Mark. Cross your fingers this summer weather continues… I will post a full race recap as always.

I adore roasted asparagus – its also to die for with some parmesean shaved over it so the parmesean just bakes on and gets crunch. But then again, everything is better with parmesean in my opinion!

This is my go-to spring recipe. Its amazing how simple ingrediants help the asparagus shine. I love using the oven until the weather gets a tad warmer and then I use this same recipe on the grill. Yum
