Healthy Chicken Salad Sandwich
Healthy chicken salad sandwiches are perfect for summer BBQs, weekday lunches, and any time you need a quick meal. Purchasing a ready rotisserie chicken from the market allows you to save a lot of time. The taste is also unbeatable. Add a few spices and other ingredients, mix together, and a healthy chicken salad is born! This would be great over a big salad or as a sandwich with some hearty whole wheat bread. However you serve it, this healthy chicken salad will be a hit!
How did I come up with it? Well, friends from RI were coming by for lunch before we headed off to Wilmington for Amy & Joseph’s wedding. I wanted to make a simple and healthy lunch that wouldn’t take forever to prepare (remember- I work full time from home) but I also wanted it to be different. Our Whole Foods has rotisserie chickens on sale on Thursdays, so the opportunity for a delicious chicken salad appeared! You can also make this with simple baked chicken breasts, but I find that the flavor of the rotisserie really adds a lot to the dish.
I am having a lot of fun in the kitchen letting the moment inspire meals. I did not know what I would add to the chicken breast, but I combined what felt right in that moment and added a little bit of this or that until it tasted just right. Don’t be afraid to let flavors, moments, anything inspire you. Healthy chicken salad sandwiches are a hit for the summer!

Healthy Chicken Salad Sandwich
Serves 2
Chicken Salad Ingredients:
1 large cooked chicken breast, shredded
1/2 carrot, diced
1/2 celery stalk, diced
3 tbs Dijon mustard
dash of paprika
2 tbs olive oil
1 tsp honey
kosher salt and pepper
Other sandwich components:
4 slices of good whole wheat bread
2 slices (2 oz total) of provolone cheese
Directions:
Whisk the mustard, paprika, olive oil and honey in a medium bowl and add a dash of kosher salt and pepper. Add the chicken breast, celery and carrot and mix together. Taste for seasonings and add more salt and pepper if necessary. Add half of the chicken salad to a slice of wheat bread and top with a slice of cheese and the second piece of bread. Repeat for the other sandwich and toast in a toaster oven for 3 minutes until bread is toasted and the cheese is melted. Enjoy!
