A lifetime of lentils.
Lentils have taken over my life. What other combinations can I think of? I believe that a lentil smoothie would be just fantastic. Don’t you?
Really though, lentils are so versatile, and since they are so healthy, they can be eaten daily. I have had so much fun making different salads out of them, and I especially enjoyed the lentil mushroom burgers.
But did you know that lentils pair really well with salmon??
PB and I have been trying to reduce our grocery bill and lentils have contributed to our new lower bill. They are so cheap! However, my body has been craving a gorgeous piece of fish for a few days. Why not combine the two?
Salmon with Lentils for 1
Serves 1
Ingredients
1 5 oz piece Atlantic salmon
¼ cup USA lentils
1.25 cups water*
dash kosher salt
1 tbs olive oil
*I increased the water because mine ended up a little burned
Directions
1. Boil the water in a small pot. Add the lentils, lower the heat and simmer for 25-30 minutes until the water has evaporated and the lentils are soft.
2. Heat the oil in a skillet over medium high heat. Sprinkle both sides of the salmon with kosher salt and cook in the skillet for 8 minutes, flipping halfway through.
3. Spoon the lentils into a bowl and top with the cooked piece of salmon. Add a few turns of freshly cracked black pepper. Enjoy!
I enjoyed this lunch immensely, but I can’t decide which lentil recipe of the 6 I should enter into the Recipe Rivalry.

who does not love a good burger … . I eat lentils everyday as part of my protein intake , being a vegetarian , it’s one of the easiest way to get your protein , plus there is a variety of them , and they all taste fantastic …

Totally the zucchini one! It’s a great recipe for the summer…i feel like it’s a big garden plant for people who do their own garden…and mint is very plentiful in the summer as well…add some lentils and it’s a PERFECT summer recipe!!!
