Make a Change for the Feta
Feta is a delicious cheese that can be added to almost any dish to add flavor, texture, and depth. A simple barley salad becomes a creamy delightful lunch, and an every day lunch salad becomes exciting with just a crumble of feta. Over the month of July I am participating in the ATHENOS Change for the Feta Challenge. It is Summer Salad Month again at RhodeyGirl Tests!
Follow me as I share my daily salads that include ATHENOS feta! By now you should know that my husband has taught me to love feta, and there is never a time where feta is not on our shopping list (as well as bananas, eggs, whole wheat bread, fresh arugula, peanut butter, and tomatoes).
Today’s featured summer salad is arugula, spinach, tomato, avocado, nuts and salmon with a bit of ATHENOS feta crumbled on top. I usually only buy the deli chunk style, but in the next few weeks I will be sampling the crumbled varieties as well.
Now that I am back from our big trip to Jordan and have joined a gym (Hi fellow Philadelphia Sports Club members!!), my quest for health is even stronger. I am still unable to run as my knee injury isn’t fully healed, so having classes to attend and a variety of machines and weights available to me is a blessing. I have really missed a gym, and I feel even more passionate about exercise and a healthy diet than ever. I will be updating my daily workouts again, so you can follow along too! The new gym in addition to sleep and this salad challenge is sure to bring changes in energy, fitness, and more. I urge you to make the same changes too!

i love that all you ladies are getting to do the feta challenge…i love LOVE feta and i really enjoy using it on salads and pizza…mmmmm, warm and melty 🙂
I am having a big greek salad tonight with this same cheese! I can’t wait- its one of my favorites. That is a great gym! Can’t wait to hear about all of your class experiences
I LOVE feta. It’s a staple in my fridge for sure! I somehow think it goes along so well with kimchi, too!
Love feta! I quit it when I got pregnant thinking it was unpasteurized but I think many brands are choosing pasteurization now for safety’s sake. Is Athenos pasteurized?
@Pupfiction, ATHENOS IS pasteurized! Go out and buy some today- you can have it even when pregnant!!!
I love feta on salads and I love to see how you are using it in unique salads! I feel some of the other bloggers aren’t using it in creative ways so I’m not as intrigued to read what they are doing with it.
I am excited to see your workout page as well! I’ve been back at the gym for 4 strong weeks and feel so much better, but need some inspiration with weight lifting. I had a few sessions with a personal trainer to help jump start my workouts with weights, but I still struggle. I guess my challenge is wanting to see instant results, I’m trying to keep a positive mind frame and know that even though my weight might not drop instantly I FEEL a million times healthier and I have been making healthy changes weekly. I know over time my arms will start looking leaner and more toned, but hopefully your workout page will help keep me motivated!

i LOVE feta! did you say you buy it in the deli?? i never even thought to do that! i miss my huge sqaures that i would get on my salads in greece!!

I love that you’ve got sleep as a high priority… I give up sleep ALL the time, sometimes for work when I have to and sometimes because I like whatever I’m doing and don’t want to stop just to *sleep*! BUT: I think it’s one of the biggest things I could do to improve my health overall. Thanks for bringing it up… I look forward to reading more about it!

Can’t wait to see what classes you attend at the new gym. I recently moved and am searching for a gym with cool classes. It’s hard to find in the burbs though 🙁
