  4. I love barley! The quick cooking kind is so easy and it makes the best grain salads like this. It’s also awesome in chili!

  5. This is so pretty! And I LOVE barley- its one of my favorite grains. This would make a perfect lunch or side dish at dinner. Hope you’re doing well :)

  6. Mmmm…can’t go wrong with tomato-basil ANYTHING! I bet that chewy barley is just fantastic in this. I saw a recipe a while ago for an asparagus-mushroom barley risotto. Barley is big right now!

Um, yummm! I live for all things Caprese! I don’t know if this is local to me (NJ) but my Whole Foods has a one day deal today on a log of fresh mozzarella that is normally $7.99 for $3.99! So, everyone check your store and see if they have this and go make this salad!!

@RhodeyGirlTests, No problem! I work in Philly but I go to the WF near my house in Marlton, NJ so I am not sure if it is store specific.

I’ve made a recipe similar to this one, but with jasmine rice instead of barley. What’s the nutritional advantage of one ingredient over the other?
